ZUCCHINI CAKE RECIPE



Ingredients:
 
2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
3 eggs
2 cups sugar
1 cup oil (can use olive oil)
2 teaspoon vanilla
2 cups finely grated zucchini
Directions:
Mix together sugar, oil, eggs, zucchini and vanilla. Combine dry ingredients and add to mix. Mix well. Grease and flour a cake pan. Pour batter into the pan. Bake in preheated oven at 350F (175C) for 45-60 minutes until knife inserted into the center comes out clean.
