Creme Caramel is basically custard dessert with caramelized sugar on top. Also known as flan, it is similar to creme brûlée, which is custard with a hard caramel on top. Ingredients are easy to find and it takes around 1 hour and 30 minutes to make.
Here is my recipe for Creme Caramel:
Serves 6-8 people
Ingredients:
For the custard:
6 eggs
1/2 cup sugar
2 teaspoons vanilla extract
4 cups (1 liter) milk
For the caramel:
2/3 cup sugar
1/3 cup water
Directions:
- Bring milk to just below a simmer in a sauce pan.
- Beat eggs and sugar until well mixed. Continue beating and gradually add the warm milk to the egg and sugar mixture and then add vanilla extract.
- Make the caramel by adding sugar and water to a sauce pan cooking on medium heat until sugar dissolved. It takes a few minuted for the sugar and water mixture to start getting brown. When the sugar has turned color evenly and it is light brown remove from heat.
- Pour caramel into your molds. Make sure they are safe to use in the oven.
- Pour milk, sugar and vanilla mixture on top of caramel.
- Place molds in a baking pan and pour warm water around them halfway up the sides. Bake them on 325-350 F (160-175 C) for 1 hour.
- You can serve the creme warm or chilled. To unmold easily run a knife between the custard and the walls of the mold. Invert the creme onto dessert plates.
